Australian Functional Ingredients – by Vic Cherikoff

Spicy Illawarra plum chutney

10ml lemon aspen juice
100ml chicken or lamb stock, reduced to appropriate thickness
1 tablespoon honey (Blue gum, Ironbark or similar)
15ml low salt soy sauce

Combine all the ingredients, heat gently to warm and stir to dissolve the honey.
