This is our newest confit product and is spectacularly delicious. We slice the Illawara plums and cure them in our unique glucose and trehalose mixture to produce a syrupy, deep purple, fully flavoured plum confit.
Illawarra plum confit is great on artisan bread, damper, pancakes or waffles. Add some to sauces for the rich plum-pine characters and intense deep plum colour. You can even just spoon some over roasted meats as a garnish. Complementary flavours include garlic, ginger, wasabi, pine nuts, coconut cream.
Add a spoonful of the Illawarra plum confit onto yoghurt or ice cream or just garnish a dessert plate. It is way more interesting than cranberry sauce with turkey or add it to apple sauce for pork. Great with cheeses such as brie, camembert, chevre, fetta and other soft cheeses.
Recent studies have shown that Illawarra plums are super fruits when it comes to the antioxidants they contain. This means that not only are they absolutely delicious, they are good for you too.
