New Products - Freeze-dried Wild Fruits

Our new freeze-drier is now fully up and running.

We are producing a range of freeze-dried (lyophilized) wild fruits for chocolate coating, snack foods, breakfast cereals etc. The range includes riberries, rainforest limes, desert limes, finger limes, Davidson plums, wild rosellas and of course, our star product; the Kakadu plum or Kalari plum.

Naturally, they are all pre-dipped in Fresher4Longer natural food rinse™ to sanitize them for added shelf life and food safety.

Freeze-dried fruits are perfect for export as the weight is so much reduced in comparison to fresh, frozen fruits making them cheaper to ship and the process maintains the antioxidant capacity as there is no heat involved. In addition to the uses given above, lyophilized whole fruits, fruit slices or powders can flavour dishes directly (Rene Redzepi recently sprinkled Kakadu Plum powder over one of his desserts at the Sydney pop-up restaurant, Noma at Barangaroo). Try them in tisanes and herb teas, fruit leathers, confectionery, seasonings and even in cosmetic products.

We have just announced this new range of products and have had a flurry of inquiries from manufacturers. It will be a case of first in, best dressed and if the initial demand is an indicator of volumes, we will be limited in supply.
