Australian Functional Ingredients – by Vic Cherikoff

Freeze-dried Superfoods

We are producing a range of freeze-dried superfoods to meet the demand for these amazing ingredients. While I stress that there is no such thing as a silver bullet to keep the vampire diseases of nutrition at bay, our wild fruits, herbs, spices and other functional foods certainly live up to their ‘superfood’ labels.

For anyone wanting to gain a nutritional advantage from superfoods, we really need to combine as many as possible and rely on what I term a silver arsenal. If you go into battle against serious opposition, would you be happy just being armed with a knife?

I’d be a whole lot more confident knowing I was backed up by ground and air support, some elite troops at my side and me, armed with handguns, an assault rifle and plenty of ammunition. I want grenades, smoke canisters, night vision goggles, a bullet-proof vest, a big mother of a knife (I’ve see Crocodile Dundee) and an attack strategy that makes sense.

The same things go for our ideal nutrition.

We need a potpourri of high quality foods which we consume 2 or 3 times a day (eat these and you only need 2 meals a day). The improved food quality feeds our microbiome and we get more healthy, leaner and age more slowly. What’s there not to like?

Anyway. Part of these high quality foods are the indigenous Australian superfoods we now make in our freeze-drier.

The range includes riberries, rainforest limes, Illawarra plums, finger limes, Davidson plums, wild rosellas and of course, our star product; the Kakadu plum or Kalari plum.

Naturally, they are all pre-dipped in Fresher4Longer natural food rinse™ (industrially known as Herbal-Active®) to sanitize them for added shelf life and food safety.

Freeze-dried fruits are perfect for export as the weight is so much reduced in comparison to fresh, frozen fruits making them cheaper to ship and the process maintains the antioxidant capacity and preserves live enzymes as there is no heat involved. In fact, our premium wild super-nutritional, L.I.F.E. (Lyophilized Indigenous Food Essentials)™ contains 12 high antioxidant, freeze-dried wild foods and a dozen other superfoods that we freeze-dry for the blend. Read more about LIFE here.

In addition to the uses given above, lyophilized whole fruits, fruit slices or powders can flavour dishes directly (Rene Redzepi recently sprinkled Kakadu Plum powder over one of his desserts at the Sydney pop-up restaurant, Noma at Barangaroo). Try them in tisanes and herb teas, fruit leathers, confectionery, seasonings and even in cosmetic products. They are also great for chocolate coating, snack foods, breakfast cereals etc.

We have just announced this new range of products and have had a flurry of inquiries from manufacturers. It will be a case of first in, best dressed and if the initial demand is an indicator of volumes, we will be limited in supply.

Drop us an email registering your interest and give us an indication of your potential requirements.
