We are producing a range of freeze-dried superfoods to meet the demand for these amazing ingredients. While I stress that there is no such thing as a silver bullet to keep the vampire diseases of nutrition at bay, our wild fruits, herbs, spices and other functional foods certainly live up to their ‘superfood’ labels.

In addition to the uses given above, lyophilized whole fruits, fruit slices or powders can flavour dishes directly (Rene Redzepi recently sprinkled Kakadu Plum powder over one of his desserts at the Sydney pop-up restaurant, Noma at Barangaroo). Try them in tisanes and herb teas, fruit leathers, confectionery, seasonings and even in cosmetic products. They are also great for chocolate coating, snack foods, breakfast cereals etc.
